Review: DoubleTree Cookie Recipe

To be perfectly honest, when I heard that DoubleTree Hotel by Hilton had released their chocolate chip cookie recipe, I was prepared to be unimpressed. I make good cookies. Really good cookies. However, my taste-testers and I were pleasantly surprised. These were really good, and they were not just your run-of-the-mill chocolate chip cookies.

Cookie Philosophy

So if you were designing a cookie recipe for a hotel, what would you want? I think you’d need to pay close attention to the smell because that will be the first thing travelers encounter when they walk through the door. Even if the guests turn down a cookie (gasp!) they still get to enjoy the smell. It should smell welcoming and homey. You’d want the same things in the taste, plus you’d want the guest to feel they’d really gotten something satisfying and of value.

Homey and Welcoming

So does the DoubleTree chocolate chip cooke recipe deliver? I think so. Most of the ingredients are exactly what you’d expect in any chocolate chip cookie recipe, because of course they are. What the Double Tree cookie recipe adds is oatmeal, cinnamon, and lemon juice.

The lemon juice is such a tiny amount that I don’t think it changes the taste at all, but it does react with the baking soda to give the cookies a little puffiness. The cinnamon is also just a pinch. While I don’t think you’d know it was there without someone pointing it out, I think the spice adds just a little bit of “hominess” to both the flavor and the smell. Similarly, there’s not a lot of oatmeal in the recipe–just a 1/2 cup in a big batch. My taste-testers didn’t even realize there was oatmeal in the cookies until I mentioned it. Oatmeal smells very comforting and is a bit sweeter than wheat flour.

Satisfying

Is it satisfying? The oatmeal gives the cookies just a bit of chewiness and since it’s a whole grain, it helps you feel satiated. Similarly, the nuts provide some protein which helps you feel more satisfied. Chocolate chips are the headliner for any chocolate chip cookie, and this recipe comes through with plenty. In addition, the cookies are on the large size, so you feel you’ve gotten something worthwhile. Even my teenage bottomless pit said one cookie really filled you up, and he found himself cutting another cookie in half because he still wanted to enjoy more cookie but was really too full.

The last bit of finesse to the recipe is that the cookies are baked longer and on a lower temperature than you’d expect–20 minutes at 300 degrees. While this would have been too long for smaller cookies, it turned out just great for the size they suggested. The cookies get a nice brown all over without getting too done inside. If you’re going to be giving cookies to guests while they are still warm, you can’t have the middles falling apart. I’m guessing that the oatmeal actually helps with this too.

Confessions Of A Quarantine Cook

At the time of writing I am, like most of the rest of the world, in quarantine. I made do with what I had. I happened to actually have a fresh lemon for the juice. Bottled juice may be slightly more acidic but since it only calls for a tiny amount, I’m sure it would be fine. I used Ghirardelli chocolate chips because they are my favorite, and we buy them in bulk. I was completely out of walnuts, so I used pecans.

Fresh From The Oven Taste

Freshly baked cookies are clearly the best. The recipe suggests that you can freeze the dough in balls and bake it immediately without having to thaw the dough. That probably works well because it cooks a long time at a low temperature.

My favorite method to get fresh cookies all the time is to bake just one batch at a time. I store the rest of the cookie dough in the fridge for the next two days and throw in a batch as we’re sitting down to eat a meal.

This time, however, I went ahead and made the whole batch at once. This meant that we had more than we could eat in 24 hours, and cookies start to go downhill after that point. No problem. We either gave them a few seconds each in the microwave or warmed them for a few seconds in a frying pan on low heat. Delicious.
