Bake Your Own Jack-Jack’s Cookie Num Nums

It’s hard to say what visitors to Pixar Pier in Disney California Adventure have been more excited about–the Incredicoaster, or Jack-Jack’s Cookie Num Nums.  I don’t know how to make roller coasters, but I do know how to make cookies, so we set out to recreate the new Pixar Pier treat at home.  We don’t have an official Cookie Num Nums recipe, but our testers said we’d nailed it.  Well, actually they just made yummy noises while continuing to stuff themselves with cookie, but I was able to interpret.

Supplies and Ingredients

There are only two things you’re going to need that are any different than what you would use to make regular chocolate chip cookies.  The first thing you’ll need is some chocolate chunks instead of chocolate chips.  To taste like Jack-Jack’s cookies, look for semi-sweet chocolate chunks.  If you can’t find them in your grocery store, you can find them online.  If you have to use regular chocolate chips, it’ll still taste great, but it won’t be as close to the original. 

The second thing you’ll need is the large baking cups like they use in the park.  These are ruffled baking cups like you use for cupcakes, but much wider and more shallow.  The paper is a lot thicker too so that it will keep its shape without the support of a pan around it.  I didn’t find anything locally, so I ended up finding mine on Amazon  The brand I used is called Welcome Home.  You want cups that are about 4 inches in diameter and are free-standing.

Recipe for Taste-Alike Jack-Jack’s Cookies

  • 1 1/3 cups butter
  • 1 cup brown sugar
  • 1 cup white sugar
  • 2 eggs
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 2 teaspoons vanilla
  • 3 cups flour
  • 1 package or 2 cups semi-sweet chocolate pieces, divided.

Directions

Start by creaming the butter and the sugars together.  Add the egg, baking soda, salt, and vanilla, and mix them thoroughly.  Next, add the flour but don’t over-mix because that changes the texture.  Finally, reserve 2/3 of a cup of pieces for later, add the remaining chocolate chunks, and mix just enough to get them fairly evenly distributed.

After that, I aged the dough for 48 hours in the refrigerator.  This is not a crucial step, so if you can’t wait that long for your cookie num nums, I totally understand.  Bake a few now.  You will still have yummy cookies, and you can save the rest of the dough for later.  When the dough ages, the butter gets more absorbed by the flour, and the cookie has all the richness you want without being greasy.  I noticed that Jack-Jack’s Cookie Num Nums weren’t greasy, and aging the dough replicated that.

If you’ve aged the dough, give it 20 to 30 minutes to reach room temperature to make it easier to scoop, then put about 2/3 of a cup of dough into your baking cups.  I went ahead and flattened the dough balls so they more or less filled the cup.  Sprinkle with some of your reserved chocolate chunks, or use the chunks to personalize them like Chef Fox did for us.

minutes at 350 degrees or until they  are browning but not turning dark.  This would be way too long for regular-sized cookies, but these are a lot bigger.  When they come out of the oven, let them cool a bit, then enjoy with a big glass of milk.  If you need to reheat a cookie later, give it about one minute on half power in the microwave.
